The Agave

Born of volcanic earth. Shaped by time.

Blue Weber agave grows in patient silence. Each plant takes years to gather sweetness in its piña while wind, rain, and mineral-rich ground slowly concentrate its character.

Malo Tiempo harvests by maturity rather than calendar. The field is walked plant by plant, and only agaves with the right density, weight, and sugar balance are selected.

Time is the first and most important ingredient.

The heart is the soul

Only the dense piña continues to the horno.

The patient cultivation

Growing the field

The patient cultivation

Rows are tended with minimal intervention and constant observation. The strongest plants establish deep roots, endure dry periods, and store the sugars that will later become the spirit’s natural sweetness.

The perfect moment

From field to horno

The perfect moment

At harvest, the leaves are cut away to reveal the piña. A skilled jimador reads color, firmness, and weight, choosing the moment when the plant has reached depth without losing freshness.

We wait so nature can create what no hand can rush.
